Haitian-Canadian Marc-Elie Lissade is making good on his mission to promote Haitian and french-creole cuisine across North America with his latest win at the 2018 Carifestival “Taste of the Caribbean” contest. The summer festival is held annually in Toronto and attracts thousands of patrons. Chef Lissade is currently on a culinary tour of North America and Canada through his company Black Apron Events, showcasing Haitian haute cuisine to new audiences.

TDN Radio caught up with Chef Lissade ahead of his next tour stop in Montreal, (Edifice Baltex 1350 Rue Mazurrete#226) on Friday, August 24th, 2018.

TDN Radio:     How long have you been a chef?
Chef Lissade:  I have been cooking since I was 8 years old, professionally 8 years now.

TDN Radio:     What is your preferred cuisine to prepare?
Chef Lissade: Creole cuisine is my first and French second

TDN Radio:     What was your strategy heading into this contest?
Chef Lissade: Stay calm. Think before doing anything, then touch and taste the products that are safe to taste raw, and smell.

TDN Radio :     What dishes did you make?
Chef Lissade: I made a Jumbo Shrimp Creole with herbs and garlic bagette, sauteed callaloo and an Avocado Jackfruit puree.

TDN Radio :     How were the dishes judged?
Chef Lissade: Tactics, efficiency, platting, taste and we had to use all the products from a mystery box.

TDN Radio :     How many competitors were there?
Chef Lissade:  3 in total.

TDN Radio :     What is it about Creole cuisine that inspires you?
Chef Lissade:  I grew up eating Creole cuisine and our food is rich not just in flavour but also history.

TDN Radio :     What does this win mean to you?
Chef Lissade:  Honestly the world. Since that day many doors are opening and also it’s a confirmation of my gift and passion for culinary art.
